Sides: (please have a vegetable, fruit, or salad in addition to chips)

-Carrots and Ranch: 2 (3lb) bags of baby carrots, 2 16 oz bottles of ranch
-Pickles: 2 (64 oz.) jars of Dill Spears
-Grapes: 10-15 lbs (only get on sale)
-Watermelon: 3 medium, cut up in cubes
-Apples: 20 lbs cut up (only get on sale)
-Applesauce: 6 (48oz) jars unsweetened applesauce
-Peaches: 3 large cans (106 oz) from Sam’s Club
-Salad: 2 bags Sam’s salad mix or 2-3 large heads of romaine lettuce
Shredded carrots, Croutons, Tomato, Shredded cheese, Onion
3—16 oz. bottles Ranch dressing
-Chips: 6 (16oz) bags of chips from Sam’s

Drinks:

– 6-7 gallons of lemonade/iced tea/gatorade, 1.5 of the 5 gal jugs. (2/3 of a big container from Sam’s
Club)
-14- 2 liters of pop

Dessert:

Brownies and Ice cream- 2 gallons of ice cream, 3 jellyroll pans of brownies (6 boxes)
Ice cream/fruit bars- 6 boxes of 24; 11 or 12 boxes of 12

Pizza

Pizza: Make sure the pizza is cut into 8 slices/pizza!!! If it is cut 10 slices you need to change
how much you order.

-Little Caesar’s (129 E 37th St, Loveland, CO 80538; 970-203-1484) $5.50/pizza. Tell
them the name of our school for tax exempt. Pick up at 11:10.
-Black Jack Pizza (1505 N. Lincoln Ave; 970-669-1717) $7-8/pizza, purchase $50 Black
Jack gift cards at Sam’s club for $40. Tell them the name of our school for tax exempt.
-Domino’s (1119 Eagle Dr, Loveland, CO 80537; 970-669-8512) $6.50/pizza.

Prep:

Call and order a few days in advance for pick up at 11:10 or 11:15. Make sure the pizza is
cut into 8 slices/pizza!!! If it is cut 10 slices you need to change how much you order.

Kids may have 1- 2 slices of pizza for $2 and may pay $1 more for additional servings.

Sloppy Joes

Sloppy Joe Sandwiches: we estimated too high; we used the quantities below.

-133 sandwiches ordered (103 people)
-We used 26 lbs. of ground beef in our recipe; 20 lbs would have been enough if the recipe below is followed x 2.
-9 – 16 ct. bags hamburger buns from Sam’s

Recipe:

10 lbs. ground beef
3 onions, chopped
5 (10.5 oz.) cans chicken gumbo soup
5 (10.75 oz) cans tomato soup
1 – (40 oz.) ketchup
1/2 cup brown sugar
1/2 cup mustard
1/2 cup vinegar
2 ½ tsp. garlic powder
2 ½ tsp. salt
1 1/4 tsp. pepper

Brown ground beef with onions. Drain grease. Return to pan and add remaining ingredients. Simmer at least 10 minutes. Serve on buns or rolls.

1 jar Mt. Olive hamburger dill chips

Wavy Potato Chips and Onion Dip; we estimated too high; we used the quantities below.

– 5 – 16 oz. bags wavy chips from Sams
– 2 – 3lb. tubs of Daisy Sour Cream
– 1 pkg Lipton Onion Soup and Dip Mix from Sam’s – we used 3 packets of the dip mix in each tub of sour cream

Fresh Fruit Salad: this quantity was just right.

– 1 watermelon
– 3 cantaloupe
– 5 lbs. grapes
– 4 pineapples

Dessert – Ice Cream Sandwiches from Walmart – we used 7 boxes

Drinks – Lemonade – used 4 gallons

Shredded Chicken

Meat: 35 pounds boneless skinless chicken breast

-5 6lbs bags frozen chicken (Sam’s Club)
-2 36 oz bottles of Italian dressing (Sam’s Club)
-1 6 pack (12 pouches) dry onion soup mix (Sam’s Club)

Recipe:

5 chicken breasts
1 envelope onion soup mix
1/2 cup Italian dressing
1 tsp. garlic salt
1/4 cup water

Prep:

Cook in crockpot for 6-8 hours. Shred and keep in the juices.

Buns:

– 8-9 bags of 24 count yeast rolls at Sam’s Club.
– OR 12 pkgs. 16-ct. Sara Lee hamburger buns at Sam’s Club

Toppings:

-2 packs of Member’s Mark Smoked Provolone Cheese Slices (2 lb.) cut slices in half
-1 Mustard 30 oz
-2 BBQ sauce 40 oz

Loaded Nachos

Roughly 140 servings

Meat: 25 pounds of ground beef with taco seasoning or 40 pounds of pork carnitas.

Topping Options:

-3 cans on Nacho Cheese from Sam’s Club (MUST add 1/2 gallon of milk to make it go
further) OR 6 pounds shredded cheddar cheese
-4 large bags of “On the Border” chips from Sam’s or 4 boxes (with 2 bags in each box)
from Sam’s
-3 48 oz jars of salsa
-5 heads of lettuce, chopped
-5 pounds sour cream
-1 (64oz) jar jalapenos
-6 (16 oz) cans of black beans
-10 pounds Spanish cooked rice
-guacamole – 16 large avocados

Hot Ham & Cheese Buns

Buy from Sam’s Club:

8-9 bags of 24-ct. dinner yeast rolls, Sam’s Club.
10-11 pkgs of Member’s Mark Uncured Honey Ham, sliced (24-36 good-sized slices in each)
2-3 pkgs Members Mark Sliced Sharp Cheddar Cheese (2 lbs.)

Prep:

Pile 2 slices of ham and half slice of cheese on each roll. Wrap individually in foil, or place a bunch
of rolls in foil pans and cover with foil to save a little prep time.

Bake:

Bake in warmer at school. 350* for 20-25 mins or until hot. Cook 3⁄4 at 11:00 and 1⁄4 at 11:30 so buns
don’t get soggy.

Hot Dogs, Chili Dogs

Hot Dogs:

7 packages of Ball Park® Classic Beef Hot Dogs, Original Length (24 ct.) at Sam’s Club

Buns:

10 pkgs. 16-ct. Sara Lee hot dog buns at Sam’s Club

Toppings:

1 Picnic Pack (2 Ketchups, 1 Mustard, 1 Sweet Relish) at Sam’s Club
1 jar Mt. Olive Dill Pickle Chips, 64 oz. At Sam’s Club
4 white onions, chopped
10 15-oz. cans Hormel Chili No Beans OR 140 oz. thick homemade recipe
3 lbs. shredded cheddar cheese

Prep:

Can grill hot dogs or bake them on cookie sheets in the oven at 400* for 15 minutes till hot and sizzling. Keep warm in roaster or crock pots.
Thoroughly heat chili in a crock pot.

Add your choice of a side, dessert, and drink.

Pulled Pork

Meat: 36-40 pounds of bone in pork butt (Boston butt, shoulder roast)

FOUR 9-10lb pork butts from Sam’s or SIX 6-7lb pork butts from King Soopers (check for sales)

Optional dry rub recipe for HALF of the roasts:
2 T. pepper
2 T. sea salt
1 T. garlic powder
1 T. onion powder
2 T. chili powder
2 T. brown sugar

Prep:

Rub on seasonings. Cook uncovered in oven at 250* for 10 hours OR cook on low in
crock pot for 10 hours. Shred and keep in juices. Can cook 2-3 roasts in a large foil pans
in oven at the same time. Freezes well, can cook ahead.

Buns:

– 8-9 bags of 24 count yeast rolls at Sam’s Club.
– OR 12 pkgs. 16-ct. Sara Lee hamburger buns at Sam’s Club

Toppings:

-4 BBQ sauce 40 oz
-1 Mustard 30 oz
